I know it's not the first choice for most people, but I want to turn my R3 into a track bike. I'm not too interested in keeping it road legal or not, I have a trailer for that. I'm interested in getting the most out of it. What are my options?
 
Since you're cool with trailering and no street rules, start with suspension upgrades, better forks or at least revalving the stock ones then swap to track tires I think and upgrade your brake pads and lines for better stopping, also a full exhaust and ECU tune will help. What kinda tracks you wanna hit

The biggest bang for your buck will come from suspension upgrades.
A good fork cartridge kit like Ohlins or Andreani and an aftermarket rear shock will transform how the bike handles and feels!
I suggest you focus on braking next, and get some aggressive race pads, stainless steel lines and consider upgrading to a larger rotor or better caliper if budget allows for more consistent stopping power.
For the engine, a full exhaust system, a high-flow air filter, and a custom ECU flash will really open it up.
You won't get superbike power, but it'll be a noticeable improvement and smoother delivery.
A quickshifter is also a great quality-of-life upgrade!
I probably don't need to mention, good sticky track tires are non-negotiable!
Finally, remove unnecessary street components and consider lighter rearsets to shed off some weight!

Awesome summary! Upgrading the suspension definitely transforms the riding experience, and I'm with you,brakes are crucial for safety and control. The engine modifications sound impressive as well, particularly that custom ECU flash. Quickshifters really do make for smoother gear changes.
